If your hosting provider boasts unlimited hosting on a shared server, you need to realize that the server does have limitations. If the other sites that share the server with your site begin to experience an influx of traffic during the holiday season, it is very possible that the server could become overwhelmed and your site may experience performance issues or might even crash. If you rely heavily on the upcoming holiday season for your site's revenue, you need to make sure your hosting plan can keep up with the needs of your site, and sometimes that means migrating your site over to a dedicated server.

When you opt for dedicated hosting, you don't have to worry that the traffic of other websites is going to interfere with the performance of your site. While the server your site is on may currently be handling the traffic load of its sites for now, when the increased traffic associated with the holidays comes in, can you be sure the traffic from those other sites won't interfere with your site's uptime?
